Home made baked beans


  • Heat a little oil in a heavy-bottomed pot and gently sauté the garlic and onion until reasonably tender, stirring now and again.
  • Add the chilli paste, brown sugar, tomato sauce, mustard, tomatoes, seasonings and 2 tbsp parsley. Stir and gently cook for about 10-15 mins until fairly thick and fragrant, adding a little stock if needed.
  • Then add the cannellini beans, stir and briefly cook to heat through.
  • Grill or toast the bread and fry or poach the eggs.
  • To serve, place a piece of toast on individual plates and top with a good mound of baked beans, an egg and a sprinkling of parsley.

  • 3 cans cannellini beans, drained & rinsed
  • 4-6 slices sourdough bread
  • 4-6 large eggs
