Grilled salmon with a tomato & watermelon salsa


  • Spray the salmon with oil and cook on a preheated BBQ or ridged grill (or pan fry).
  • To make the salsa, toss the tomatoes, watermelon, spring onions, chilli, coriander, salt, pepper, lime juice and a splash of olive oil until well combined.
  • To serve, mound the salsa in individual flat soup bowls and top with the fish.

  • 4 x 180 gm salmon fillets
  • 2 punnets cherry tomatoes, quartered & then halved
  • 1½ cups diced watermelon
  • 2 spring (green) onions, finely chopped
  • 1 small red chilli, finely chopped
  • 2-3 tbsp chopped fresh coriander
  • sea salt & freshly ground pepper
  • juice of ½ lime
  • olive oil
