Jam pies


  • Preheat oven to 180°C fan forced (200°C normal).
  • Cut 24 small rounds in the pastry sheets and place half of them in a lightly oiled 12-hole tart tin.
  • Spoon a dollop of jam in the centre of each cavity.
  • Then place the remaining pastry rounds on top and press down the edges.
  • Combine the icing sugar with 2-3 tbsp water. Then put a dollop of the icing on each pie and smooth out a bit.
  • Cook in the oven for about 20 mins until golden brown.


  • 3-4 shortcrust pastry sheets

  • strawberry or raspberry jam
  • 1 cup icing sugar
