Fried egg sandwich

Method

  • Cut a hole in middle of each slice of bread with a pastry cutter. 
  • Heat a little oil and butter in a pan and cook the bread on one side lightly before turning over.
  • Then break the eggs separately into a glass and place in each bread hole. Cook and sprinkle with salt, pepper and parsley. 
  • Serve with a good tomato sauce on the side.

  • 2 thick slices of country-style bread
  • olive oil
  • a knob of butter
  • 2 eggs
  • freshly ground salt & pepper
  • freshly chopped parsley
