Monte Cubano


  • To make the aioli (garlic mayo), combine the mayonnaise with 1 heaped tspn mustard, a good squeeze of lemon juice and the garlic.
  • Then spread the aioli on one side of 4 slices of bread and top with the cucumber pickles, shaved ham, smoked chicken and gruyere. Spread with a little more aioli and mustard, and firmly press the other pieces of bread on top.
  • Whisk the eggs with the milk and seasonings in a large bowl. Then carefully dip in the sandwich and soak well.
  • Heat a little oil in a heavy-bottomed pan and fry the sandwich until golden on both sides, pressing down with a spatula regularly.
  • Drain on kitchen paper towels before serving.

  • cucumber pickles (or dill pickles)

  • slices of gruyere cheese

  • ¼ cup milk
  • sea salt & freshly ground pepper
  • olive oil
