Ga Pop chicken salad

Method

  • Remove the skin from the chicken and shred the meat. Then put in a large bowl with the red onion, tomatoes, spring onions, fresh herbs and capsicum.
  • In another bowl, whisk the lemongrass, garlic, chillies and ginger with the sugar, fish sauce, lime juice and ¼ cup oil. Taste for balance and then toss most of the dressing through the salad.
  • Serve on individual plates with a little more dressing sprinkled on top.

Ingredients

  • 1 bought Asian soya sauce chicken, portioned
  • ½ red onion, very finely sliced
  • ½ punnet cherry tomatoes, quartered
  • 2 spring (green) onions, shredded
  • a good handful of fresh coriander leaves
  • a good handful of fresh mint leaves, torn
  • 1 red capsicum, cored, seeded & finely diced
  • 1  lemongrass stalk, tough outer leaves removed, pounded & then very finely sliced
  • 4 garlic cloves, very finely chopped
  • 4 small red chillies, very finely chopped
  • 1 heaped tspn grated fresh ginger
  • ½ tbsp shaved palm (or soft brown) sugar
  • 1 tbsp Asian fish sauce
  • juice of 1 lime
  • peanut or vegetable oil
