Mini Cornish pasties with homemade ketchup

Method

  • 2 or 3 days before serving, put the tomatoes, apples, 500 gm coarsely chopped onions, the sugar, vinegar, 2 tbsp salt, a good amount of ground pepper and the spices in a very large heavy-bottomed pot. Mix well and gently cook for about 1-1½ hours until thick and fragrant, stirring now and again. Then blend until smooth.
  • When ready, heat a little oil in a large heavy-bottomed casserole (or pot) and gently sauté the remaining onions finely chopped until tender, stirring now and again.
  • Add the beef, swedes and potatoes. Toss well and briefly cook, before adding the stock, canned tomatoes, parsley, a decent amount of salt and a little ground pepper. Mix well and bring to the boil. Turn the heat down and gently simmer for about 45-60 mins until the meat is very tender and the sauce is thick and fragrant, stirring now and again. Check for seasoning and set aside to cool. Then stir through 2 heaped tbsp ketchup.
  • Cut 4 rounds in each pastry sheet on a lightly floured workbench. Mound the filling in the centre, fold over and crimp the edges with a fork, before deep frying and  then draining on kitchen paper towels.
  • Serve the pasties with the ketchup on the side.
  • nb.  If you prefer, the pasties could be painted with egg wash (1 egg mixed with ¼ cup milk) and cooked in the oven until golden brown.

  • 2 kg ripe red tomatoes, cored & roughly chopped
  • 500 gm Granny Smith apples, peeled, cored & roughly chopped
  • 725 gm onions, peeled
  • 400 gm white sugar
  • 1¼ cups white vinegar
  • sea salt & freshly ground pepper
  • 3 tspn ground allspice
  • 2 tspn ground cloves
  • a pinch of cayenne
  • olive oil
  • 1 kg stewing steak, eg. chuck, very finely diced (not minced)
  • 225 gm swedes, peeled & diced
  • 225 gm potatoes, peeled & diced
  • 2 cups veal (or beef) stock
  • ½ can diced tomatoes
  • 1 heaped tbsp chopped fresh parsley
  • 2-3 puff pastry sheets
  • vegetable oil for frying
