Barbecued duck, Chinese sausage & Hokkein noodle salad


  • Plunge the carrots, noodles and Chinese sausage in a pot of boiling water and briefly cook until the noodles are tender, adding the snowpeas, bok choy and bean shoots for the last few seconds. Then drain well and transfer to a large bowl.
  • Whisk the soy with the honey, BBQ sauce and sweet chilli sauce in another bowl.
  • Then add the duck to the noodle mixture and toss well with the sauce to taste.
  • Serve the salad with the coriander and more sauce sprinkled on top.


  • 4 baby carrots, sliced on the diagonal
  • 300 gm Hokkien noodles
  • 2 Chinese sausages, sliced on the diagonal
  • 12 snowpeas, shredded on the diagonal
  • 2 bok choy, cleaned & shredded
  • a handful of bean shoots
  • ¼ cup soy sauce
  • ¼ cup melted honey
  • 1 cup spicy BBQ sauce
  • 1 cup Thai sweet chilli sauce (speckled one)
  • 1-2 warm bought Asian BBQ duck breasts, chopped
  • 2 tbsp chopped fresh coriander leaves
