Steak with a chocolate stout & mushroom sauce

Method

  • Soak the porcinis in warm water for 20-30 mins. Then drain well, reserving the liquid.
  • Heat a little oil in a heavy-bottomed pan and gently sauté the capsicum, garlic and hardy mushrooms until tender, stirring now and again. Add the porcinis with the tomato paste. Toss well and cook to toast.
  • Then add the beer with 1 cup stock, quite a bit of salt and pepper, the sugar, bay leaves, thyme, a little of the strained porcini liquid and the caramelised onions. Mix well and cook for about 20-30 mins until the sauce is thickened, stirring now and again, adding more stock if needed. Taste for seasoning.
  • While the sauce is cooking, place the carrots in another pan with water to just cover, a little salt and the butter. Toss and cook until the liquid has been reduced and the carrots are lightly caramelised, regularly tossing.
  • At the same time, cook the steaks on a preheated BBQ (or ridged grill) to the desired degree. Set aside to rest for a few minutes.
  • Serve the steaks on individual plates with plenty of the mushroom sauce spooned over the top, the carrots alongside and a sprinkling of parsley.

  • 10 gm porcini mushrooms
  • olive oil
  • 1 red capsicum, cored, seeded & finely sliced
  • 2 garlic cloves, finely sliced
  • a good handful of a selection of hardy mushrooms, sliced
  • 1 tbsp tomato paste
  • 1-2 tbsp plain flour
  • 2 cups chocolate beer (or stout), at room temperature
  • 1-2 cups veal or chicken stock
  • sea salt & freshly ground pepper
  • 1 heaped tspn brown sugar
  • 2 bay leaves
  • a few fresh thyme sprigs
  • 2 heaped tspn Stefano’s Caramelised Onions (optional)
  • 1 bunch baby carrots, washed well, tops attached
  • a good dollop of butter
  • 4 x 250 gm steaks
  • 2 tbsp chopped fresh parsley
