  • To make the dough, combine the yeast with 600 gm flour, the sugar, milk powder, salt and bicarb in a stand mixer for 2 mins on a low speed.
  • Mix the water with 2½ tbsp vegie oil. Then add to the dry ingredients, little by little, continually mixing for about 3-4 mins until a fairly wet, sticky dough is formed, adding more flour or oil as needed.
  • Transfer the dough to a large oiled bowl, cover with a clean tea towel and set aside in a warm spot for about 45-60 mins until doubled in size.
  • Then knock the dough back on a lightly floured workbench, making sure there are no air bubbles, and portion into 3. Roll out each portion into 3 cm thick logs and cut across each one to make 30 gm pieces.
  • Dust each piece with flour and roll out to form about 10 cm oval shapes.
  • Soak a chopstick in vegie oil and gently brush across the centre of each piece of dough. Then place the chopstick in the middle, fold the oval in half to form a half moon shape, remove the chopstick and place on a large baking tray. Repeat the process with the remaining dough. Cover with a wet tea towel this time and set aside for about another 30 mins.
  • When ready, steam the buns for about 10 mins and fill with your favourite fillings, eg. Asian flavoured braised pork belly, sliced cucumber and sliced spring (green) onions, before being sprinkled with Hoisin sauce, fresh coriander and micro herbs.
  • nb.  The buns can be made a day or two before using and then just steam to serve.
