Moroccan Chermoula marinated chicken with couscous & harissa yoghurt


  • To make the marinade, process ¾ cup oil with the herb leaves, spices, chilli paste, chutney, soy, quite a bit of ground pepper and the lemon juice until pureed. Taste for seasoning and flavour balance.
  • Place the chicken in a large bowl, pour the marinade over the top and toss until the chicken is well coated. Then refrigerate for at least 1 hour (overnight is even better), turning now and again.
  • When ready, preheat oven to 200°C fan forced (220°C normal).
  • Then transfer the chicken to a large baking tray in one layer, spoon a decent amount of the marinade on top and cook in the oven for about 20 mins until the juices run clear when pierced with a skewer.
  • While the chicken is cooking, bring the orange juice, cinnamon and 2 tbsp oil to the boil in a heavy-bottomed pot.
  • Combine the couscous, raisins and butter in a bowl. Pour the hot liquid over the top, stir with a wooden spoon until the butter has melted and then set aside for a few minutes, before fluffing up with a fork.
  • In another bowl, combine the yoghurt, harissa and chopped coriander with a little hot water if too thick. Taste for seasoning.
  • Serve the chicken on a bed of couscous on individual plates with the cooking juices spooned over the top and a sprinkling of the yoghurt.
  • nb.  The chicken could be cooked on the BBQ or ridged grill if you prefer.

  • 1 cup fresh orange juice
  • 1 tspn ground cinnamon
  • 1 cup instant couscous
  • 2 tbsp raisins
  • a large knob of soft butter
  • ½ cup Greek yoghurt
  • 1 heaped tspn harissa
  • 2 tbsp roughly chopped fresh coriander leaves
