Cajun cheese pud with spicy sausages

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Beat the eggs in a large bowl and add the milk, cream, Tabasco, salt and smoked paprika. Whisk well and then stir in the cheese.
  • Transfer the mixture to a gratin dish (or individual dishes) and bake in the oven for about 20 mins until golden brown.
  • At the same time, blanch the sausages until firm to the touch. Then drain well and panfry in a thin layer of hot oil, before slicing on the diagonal.
  • Serve the sausages in a bowl alongside the pud to dunk in.

  • 2 large eggs
  • ½ cup milk
  • ½ cup thickened cream
  • a few splashes Tabasco
  • sea salt
  • a good pinch of smoked paprika
  • 450 gm gruyere cheese, grated
  • 4-8 spicy sausages
  • olive oil
