Chimichanga pies


  • Preheat oven to 180°C fan forced (200°C normal).
  • Lightly batten out the chicken breasts between clingwrap to an even thickness. Set aside.
  • Whisk the cumin and curry mix with 1 tspn pureed chipotles, seasonings and 1-2 tbsp oil in a large bowl until well combined. Add the chicken, toss until well coated and then lightly sear  in a thin layer of hot oil (DON’T cook right through). When ready, set aside to cool a little, before finely slicing on the diagonal.
  • Combine the cheese, sour cream, coriander, juice of ½-1 lime and the remaining chipotle puree. Then toss in the chicken.
  • In another bowl, toss the celery, tomatoes, spring onions and radishes with a splash of oil and a squeeze of lime juice. Set aside.
  • Whisk the egg with milk in a small bowl.
  • Using a pastry cutter, cut out rounds in the pastry sheets. Then mound the chicken mixture in the centre of 4 of the pastry rounds, leaving an edge, and place in a1-2 large baking trays (lightly oiled if needed). Then paint around the edges with egg wash and press the remaining pastry rounds on top. Crimp the edges, brush with egg wash and then cook in the oven for about 10 mins until risen and golden brown.
  • Serve the pies with a dollop of chutney or relish and the salad alongside.

  • 2 limes
  • 3-4 celery stalks, finely sliced on the diagonal
  • ½ punnet cherry tomatoes, halved
  • 2 spring (green) onions, finely sliced
  • 6-8 radishes, sliced
  • 1 egg
  • ¼ cup milk
  • 4-6 puff pastry sheets
  • olive oil spray (optional)
  • your favourite chutney or relish
