Apple Samosas


  • Preheat oven to 180°C fan forced (200°C normal).
  • Put the apples, sugar, sultanas, water and mixed spice in a heavy-bottomed pot, and gently cook until tender and dry. Then drain well and set aside to cool a little.
  • When ready, cut out rounds in the pastry with pastry cutters and beat the egg with the milk.
  • Spoon some apple mixture in the centre of each pastry round, leaving an edge, being careful not to over stuff. Then paint around the edges with the egg wash and fold the pastry over. Crimp the edges with a fork and generously paint with more egg wash. Place the samosas on 1-2 lightly oiled baking trays and cook in the oven for about 10 mins until golden.


  • 4 Granny Smith apples, peeled, cored & cut in wedges
  • 100 gm caster sugar
  • 100 gm sultanas or raisins
  • a good splash of cold water
  • 2 tspn mixed spice
  • puff pastry sheets
  • 1 large egg
  • ¼ cup milk
  • cooking oil spray
