Choc chip cookies


  • Preheat oven to 140°-150°C fan forced (160°-170°C normal).
  • Put everything in the bowl of a stand mixer and mix on low (1) using the dough hook until the mixture starts to come together. Then increase the speed to medium (4) and beat for 2 mins.
  • Using a tablespoon as a measure, roll the dough into balls with your hands and place on 2 baking trays lined with baking paper, leaving room to spread out. Then cook in the bottom third of the oven for about 20 mins until firm. When ready, remove and set aside on the trays for 5 mins, before transferring to a cake rack to completely cool.
