Grilled salmon with a coconut-curry sauce

Method

  • Combine the tomatoes and spring onions with 1 sliced chilli, 1 heaped tbsp chopped coriander, the juice of 1 lime, seasonings and a good slurp of oil. Set aside to develop the flavours.
  • Heat a little oil in a large heavy-bottomed deep pan and gently sauté the red onion and garlic until tender, stirring now and again.
  • Add the lime leaves, spices, chilli paste and cloves. Mix well and briefly cook to toast.
  • Then add the coconut milk with about 1 cup stock and seasonings. Mix well and briefly cook, before adding the corn and apple. Cook for about 10-15 mins until of a sauce consistency, adding more stock if needed.
  • When ready, season the fish, sprinkle with lime juice and cook on a lightly oiled, preheated ridged grill (or BBQ).
  • Then drain the tomato mixture, stir through the curry sauce and taste for seasoning.
  • Serve the fish on a bed of the sauce in individual flat soup bowls with a sprinkling of chilli, coriander and Vietnamese mint on top.

  • 1 punnet cherry tomatoes, quartered & then halved crossways
  • 3 spring (green) onions, finely sliced
  • 1-2 small red chillies, seeded & finely sliced
  • 2-3 heaped tbsp chopped fresh coriander
  • juice of 2-3 limes
  • sea salt & freshly ground pepper
  • peanut or vegetable oil
  • 1 small red onion, finely chopped
  • 2 plump garlic cloves, crushed
  • 2-3 kaffir lime leaves
  • 1 cinnamon stick, broken
  • 1 tspn ground coriander
  • 1 tspn ground cumin
  • 1 tspn ground turmeric
  • 1 heaped tbsp chilli paste
  • a few whole cloves
  • 1 cup coconut milk
  • 1-2 cups chicken, fish or vegie stock
  • 1 cup corn kernels
  • ½ small Granny Smith apple, diced
  • 4-6 x 180 gm salmon (or other steaky fish) steaks
  • 2 tbsp sliced fresh Vietnamese mint
  • 1 long red chilli, seeded & finely sliced
  • ½ cup extra fresh coriander sprigs
