Scallopini Milanese with Salsa Roja & a minted zucchini salad


  • Preheat oven to 180°C fan forced (200°C normal).
  • To make the sauce, heat a little oil in a heavy-bottomed pot and gently sauté the onion and 2 crushed garlic cloves until reasonably tender, regularly stirring.
  • Add the capsicum with seasonings and the chilli paste. Briefly toss to toast.
  • Then add the tomatoes, stock and vinegar. Mix well, turn the heat down and simmer until thick and fragrant. Taste for seasoning and stir in the oregano.
  • At the same time, heat a fresh layer of oil in another pan and gently sauté the zucchini with 2 finely sliced garlic cloves for 5-10 mins until lightly coloured, regularly stirring. Then drain well and put in a large bowl with the mint vinegar, 8 finely sliced mint leaves and a little salt and pepper. Mix well and taste for seasoning.
  • Place flour in one bowl, the eggs mixed with milk in another, and the crumbs mixed with parmesan in a third bowl.
  • Then individually dust the veal with flour, dip in the egg wash and firmly press into the crumbs.
  • Heat a layer of oil in a non-stick pan (that can go into the oven) and seal the veal on both sides. Then put in the oven to finish off the cooking process.
  • Serve the veal on individual plates with a good spoon of the sauce on top and a mint sprig to garnish.

  • ½ cup milk
  • 1-2 eggs
  • 1½ cups Panko crumbs
  • ½ cup freshly grated parmesan
