Bunny Chow


  • Preheat oven to 200°C fan forced (220°C normal).
  • Slice a 3 cm piece off the top of the bread lengthways, reserving it, and hollow out the base. Set aside.
  • Then heat the oil in a large heavy-bottomed pot, add the curry leaves and toss for about 10 secs.
  • Turn the heat right down and add the onions and ginger. Mix well, cover and simmer for about 7-8 mins until very soft.
  • Add the chilli paste and garam masala. Mix well to toast, before adding the tomatoes with 1 cup stock, the potatoes and seasonings. Stir and gently cook until the potatoes are tender and the liquid has reduced, adding more stock as you do so.
  • Then add the kidney beans with the green beans, a little more stock and the lemon juice. Cook for about 10 mins until thick and fragrant. Taste for seasoning and stir through the coriander.
  • When ready, place the bread on a large sheet of kitchen foil in a baking tray. Fill with the bean mixture, spray the bread with oil and wrap up in the foil, leaving it fairly loose on top. Then cook in the oven for about 15-20 mins.
  • Serve in the middle of the table with the bread lid on and spoons and knives, so everybody can cut a piece of bread for themselves.



  • 1 loaf country-style or sandwich bread, unsliced (NOT sourdough)
  • 4 tbsp vegetable oil
  • 3 sprigs curry leaves, stalks removed
  • 2 large onions, finely chopped
  • 5 cm knob fresh ginger, grated or julienned

  • 1 x 180 gm can diced tomatoes
  • 1-2 cups vegetable stock
  • 6-8 chats (baby potatoes), quartered
  • 2 x 180 gm cans red kidney beans,  drained & rinsed
  • 18 small green beans, topped & tailed
  • juice of ½-1 lemon
  • 1-2 tbsp chopped fresh coriander
  • sea salt & freshly ground pepper
  • olive oil spray
