Chicken satay with a peanut sauce

Method

  • Trim any excess fat from the chicken and cut into about 2 cm-wide long strips. Then put in a large bowl.
  • Process ½ cup oil with the white sugar, curry powder. sambal, 2 chopped garlic cloves and the shallots. Pour the marinade over the chicken and toss to coat well. Cover and refrigerate for 1-2 hours. Then clean the processor well.
  • Heat a little fresh oil in a heavy-bottomed pan and gently sauté the remaining garlic with the chilli, red onion and peanuts. Stir well and cook for 3-4 mins until the peanuts start to colour, regularly tossing. Then process until reasonably smooth.
  • Return the paste to the pan with the stock, coconut milk, palm sugar, tamarind paste and kecap manis. Stir well and simmer for about 10-15 mins until thick and fragrant. Set aside and cool to warm, before transferring to small bowls.
  • When ready, thread each chicken piece onto a bamboo skewer lengthways, ensuring that the wood is not exposed at the top. Then cook on a lightly oiled, preheated ridged grill (or BBQ).
  • Arrange the skewers on a large platter, scatter the coriander over the top and serve as a delicious starter or snack with the peanut sauce on the side.
  • nb.  Soak the bamboo skewers in cold water for 30 mins before using.

Ingredients

  • 4-6 boneless, skinless chicken thighs
  • canola or vegie oil
  • 1 tspn white sugar
  • 1 heaped tspn curry powder
  • 1 heaped tbsp sambal oelek (or any chilli paste)
  • 4 garlic cloves, roughly chopped
  • 4 shallots, peeled & sliced
  • 1 small red chilli, finely sliced
  • ½ small red onion, finely chopped
  • 200 gm unsalted, roasted peanuts
  • 400 ml chicken stock
  • 150 ml coconut milk
  • 50 gm shaved palm (or soft brown) sugar
  • 1 tspn tamarind paste
  • 2 tbsp kecap manis (Indonesian sweet soy sauce)
  • olive oil spray
  • a good handful of fresh coriander leaves
