Steamed chicken in a ginger, orange & star anise broth

Method

 

  • Place the sliced chicken on a flat soup bowl that can fit in your steamer and sprinkle with the orange juice and zest, star anise, ginger, soy and stock.
  • Then carefully put the plate in the steamer basket, cover and gently cook for about 8 mins, basting now and again.
  • When the chicken is almost ready, place the bok choy on top, cover again and cook until the bok choy wilts.
  • Serve the chicken and bok choy on a bed of steamed rice with the cooking juices poured over the top and a garnish of coriander.

 

Ingredients

 

  • 1 chicken breast fillet, sliced into 3 on the diagonal
  • juice & grated rind of ½ orange
  • 1-2 star anise
  • 1 tspn fresh ginger matchsticks
  • a good splash of soy sauce
  • a slurp of chicken stock
  • a few baby bok choy leaves
  • a few fresh coriander sprigs
