Sweet potato wedges



  • Preheat oven to 180°C fan forced (200°C normal).
  • Cut the sweet potatoes lengthways into wedges and place in a large heavy-bottomed baking tray. Add the rosemary, thyme, a little salt, quite a bit of ground pepper and a decent amount of oil. Then toss, using your hands, until well coated.
  • Make sure the sweet potato is skin side down, in one layer, and cook in the oven for about 30-40 mins until golden, turning every now and then.
  • Serve as an accompaniment to your favourite simple chicken, meat or fish dish.




  • 2-3 small sweet potatoes, scrubbed well, skin on
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • sea salt & freshly ground pepper
  • extra virgin olive oil
