Margherita di Bufalo pizza


  • Preheat oven to 220°C fan forced (240°C normal).
  • Smear the pizza base with the sauce almost to the edge. Scatter the local mozzarella over the top and then the Italian mozzarella.
  • Sprinkle with the basil and oil and place either on a pizza stone or on an upside down preheated baking tray. Then cook in the oven until the base is crisp with good colour.

  • pureed Italian tomato cooking sauce, bought or homemade
  • 1-2 local mozzarella, sliced
  • 1 Italian buffalo mozzarella, torn
  • a handful of fresh baby basil leaves
  • extra virgin olive oil
