Capriciosa pizza


  • Preheat oven to 220°C fan forced (240°C normal).
  • Heat a little oil in a pan and gently sauté the mushrooms until soft.
  • Then smear the pizza base with the sauce almost to the edge. Scatter with the prosciutto and mozzarella and then the artichokes, mushrooms and olives.
  • Sprinkle with a little oil and place either on a pizza stone or on an upside down preheated baking tray. Then cook in the oven until the base is crisp with good colour.

  • 6 button mushrooms
  • olive oil
  • 1 bought or homemade pizza base
  • pureed Italian tomato cooking sauce, bought or homemade
  • local mozzarella, sliced
  • 4-6 fine slices prosciutto
  • 4 bottled olive oil marinated artichokes, finely sliced
  • 6-8 pitted black olives, halved
