Smoked chicken with camembert & red currant pizza

Method

  • Preheat oven to 220°C fan forced (240°C normal).
  • Smear the pizza base with the sauce almost to the edge. Then scatter the mozzarella, smoked chicken and camembert on top.
  • Lightly sprinkle the relish over the lot and place either on a pizza stone or on an upside down preheated baking tray. Then cook in the oven until the base is crisp with good colour.
  • Serve with the spring onions scattered on top.

  • 1 bought or homemade pizza base
  • pureed Italian tomato cooking sauce, bought or homemade
  • grated mozzarella cheese
  • smoked chicken, sliced
  • camembert cheese, cut into chunks
  • red currant (or cranberry) relish
  • 2 spring (green) onions, finely sliced on the diagonal
