Anchovy & cheese pinwheels

  • Preheat oven to 180°C fan forced (200°C normal).
  • Whisk the egg with the milk.
  • Then join the pastry sheets together using the egg wash.
  • Scatter the cheese down the centre of one side, leaving an edge, and top with the anchovies. Then tightly roll up just to the edge of the second piece of pastry.
  • Sprinkle more cheese close to the rolled edge and top with the remaining anchovies. Then roll up tightly to the end and seal the edge with egg wash.
  • Cut the ‘roll’ into neat rings and place them in a lightly oiled baking tray. Paint with more egg wash and cook in the oven for about 10-12 mins until golden brown.

  • 1 egg
  • ¼ cup milk
  • 2 puff pastry sheets
  • 1 cup grated tasty cheese
  • 8-12 anchovies, drained well
  • olive oil spray
