BBQ T-bone steak with a blue cheese melt & charred radicchio



  • Spray the steaks with oil, season and cook on a preheated ridged grill (or BBQ) to the desired degree, squeezing with lemon juice as you do so. Set aside.
  • When ready, spray the radicchio all over with oil and cook, cut side down first, until lightly charred.
  • Combine and mash the blue cheese with the buttermilk, Panko crumbs, parsley and thyme.
  • To serve, place a steak on individual plates, top with a good knob of the cheese mixture and place the radicchio alongside.




  • 4 x T-bone steaks
  • olive oil spray
  • sea salt & freshly ground pepper
  • 1-2 lemons
  • 2 heads of radicchio, cut in half lengthways & washed well
  • 125 gm soft blue cheese, crumbled
  • ¼ cup buttermilk
  • ¼ cup Panko crumbs (or plain packet breadcrumbs)
  • 2 tbsp chopped fresh parsley
  • 1 tbsp fresh thyme leaves
