Mini meatloafs with sauteed cabbage

Method

  • Preheat oven to 200°C fan forced (220°C normal).
  • Soak the bread in beef stock until moist. Then squeeze out any excess moisture and transfer to a large bowl.
  • At the same time, heat a little oil in a large heavy-bottomed pot and gently sauté the garlic with the red onion and capsicum until reasonably tender, stirring now and again. Then add the mixture to the bread with the mince, ¾ cup BBQ sauce, the mustard, plenty of seasonings, the eggs and parsley. Mix until well combined using a wooden spoon.
  • Spoon the mixture into the individual sections of a lightly oiled 8-cup petite loaf pan (available in our online shop), press into the corners and cook in the oven for about 30 mins until a skewer comes out clean.
  • Then, while still hot, lightly brush the tops with more BBQ sauce and set aside for 10 mins before slicing (or serve whole).
  • While the loaf is resting, heat a little oil in a heavy-bottomed pan and gently sauté the brown onion and bacon until golden, regularly stirring.
  • Then add the cabbage with the chicken stock, seasonings and parsley. Toss and briefly cook until the liquid has reduced and the cabbage has just wilted.
  • Turn out the loaves and serve on a bed of cabbage on individual plates.
  • nb.  If you prefer, one large meatloaf can be made in a loaf pan.

  • 1 cup American-style BBQ sauce
  • 2 heaped tbsp Dijon mustard
  • sea salt & freshly ground pepper
  • 2 large eggs
  • 3 tbsp chopped fresh parsley
  • olive oil spray
  • 1 small brown onion, sliced
  • 2 rindless bacon rashers, sliced (optional)
  • 2 cups shredded cabbage
  • 1-2 cups chicken stock
  • 1 heaped tbsp chopped fresh parsley
