Yam Neua (Thai beef salad)



  • Cook the steaks on a lightly oiled, preheated ridged grill (or BBQ) to the desired degree, squeezing a little lime juice over the top as you do so. When ready, remove and set aside to rest for 4-5 mins before slicing on the diagonal.
  • To make the dressing, whisk the fish sauce, garlic and chillies with the juice of  1½-2 limes and the sugar until well combined. Taste for seasoning.
  • When ready, toss the sliced steak and the remaining ingredients with the dressing to taste. Then serve on individual plates with more dressing sprinkled over the top.

  • a little, very finely shaved palm (or soft brown) sugar
  • a good handful of fresh coriander sprigs
  • a good handful of fresh mint sprigs
  • ¼ continental (telegraph) cucumber, sliced
  • 6 radishes, cut into wedges
  • 1 punnet cherry tomatoes, halved
  • ½ red onion, finely sliced
