Myrtle Allen's dead easy brown bread

  • Put the whole wheat flour in a large bowl and then place it in either a turned off oven or one with only the pilot on. Leave it until both the bowl and flour are warm (not hot).
  • Whisk the yeast in ½ cup warm water until dissolved. Then add the molasses and mix well.
  • Add another ½ cup warm water and whisk well.
  • Then add the yeast mixture and salt to the warmed flour. Mix well using a wooden spoon, adding up to 1 more cup of warm water, if needed to form a wet, fairly sticky dough.
  • Spoon the dough into an oiled bread tin, cover with clingwrap and set aside in a warm spot until risen by one-third.
  • When ready, preheat oven to 180°C fan forced (200°C normal).
  • Then cook the bread in the oven for about 50 mins until hollow when tapped on the bottom.
  • Slice and serve with good quality butter.

  • 3¾ cups stone ground whole wheat flour
  • 1½ sachets dry yeast
  • 2 cups warm water
  • 2 tbsp molasses
  • 1 tbsp salt
  • cooking oil spray
