  • Heat a little oil in a large heavy-bottomed pot and gently sauté the onions, carrot, celery and garlic until reasonably tender, regularly stirring.
  • Add the mince and cook until it changes colour, continually mashing and stirring as you do so.
  • Then add the tomatoes and tomato puree with ½ cup beef stock, the bay leaves, chilli paste and seasonings. Stir well and cook for about 45 mins until thick and fragrant, adding more stock if needed and stirring now and again. When ready, remove the bay leaves.
  • Preheat oven to 200°C fan forced (220°C normal).
  • To make the mornay sauce, melt the butter in a heavy-bottomed pot and add the flour. Mix well and cook over a very low heat for 4-5 mins.
  • Add the hot milk all at once and whisk well. Then cook over a moderate heat for 10 mins, until reasonably thick, adding more milk as necessary. 
  • Add a good handful of grated tasty cheese and seasonings to taste. Mix well until the cheese has melted. Then set aside.
  • At the same time, cook the pasta in salted boiling water until al dente. Drain well.
  • Then layer a large gratin dish (or casserole) with the pasta, meat sauce and grated parmesan. Press down and repeat the process, finishing with the mornay sauce, extra tasty cheese and grated parmesan. Cook in the oven for about 10-15 mins until golden and bubbling.
  • Serve with a simple green salad or steamed green vegies on the side.
