Red onion & cheese tart


  • Preheat oven to 180°C fan forced (200°C normal).
  • Heat a layer of oil in a heavy-bottomed pan and gently sauté the red onions with seasonings, covered, for about 10 mins until tender. Then drain well in a sieve or colander.
  • Spray a large oven tray with oil and place the pastry sheet on top. Then mark a border around the edge with a sharp knife.
  • Mound the onions in the centre of the pastry, leaving the border free, and top with the tasty cheese and then parmesan.
  • Beat the egg with the milk and paint the pastry edges. Then cook in the oven until golden and bubbling.
  • Serve with a simple salad on the side.
