Pork steaks with Coca Cola BBQ sauce & parmesan buttered corn

  • Preheat oven to 180°C fan forced (200°C normal).
  • Put the Coke, tomato sauce, soy, sweet chilli sauce, red wine vinegar, sambal and garlic in a heavy-bottomed pot. Mix well and simmer for about 15-20 mins until fairly thick. Taste for seasoning.
  • Place the pork steaks in 1-2 large oven trays, in one layer, and sprinkle with a little oil. Cook in the oven for about 5 mins.
  • Then turn the steaks over, brush well with the marinade and cook in the oven for about another 10 mins.
  • When the pork is almost ready, blanch the corn in plenty of salted, simmering water. Then, if you like, cook on a preheated ridged grill (or BBQ) to colour.
  • Generously brush the corn cobs with melted butter and then toss in grated parmesan.
  • Serve the pork steaks on individual plates with the extra sauce in a small bowl and a corn cob on the side.
