Tomato, pineapple & cucumber salad with a Vietnamese dressing


  • Whisk the chillies, garlic, lime juice, fish sauce, vegie oil and sugar in a bowl until dissolved.
  • Then gently toss the remaining ingredients with the dressing to taste.
  • Sprinkle with a little more dressing and serve.


  • 2 small red chillies, finely chopped
  • 1 large garlic clove, finely chopped
  • juice of ½ lime
  • a good splash of Asian fish sauce
  • 2 tbsp vegetable oil
  • 1 heaped tspn white sugar
  • ½ continental (telegraph) cucumber, peeled & cut into chunks
  • 1 heaped cup pineapple wedges
  • 8 cherry tomatoes, halved
  • 1 heaped tbsp fresh coriander leaves
  • 1 heaped tbsp fresh mint leaves
