A true blue steak sanga

Method

  • Heat a little oil in a pan and gently sauté the onions and garlic until tender. Remove.
  • Season the steaks and cook to the desired degree in a thin layer of hot oil in the pan. Also remove.
  • Add fresh oil to the pan and cook the bacon and eggs, covered, until the eggs are lightly set.
  • Toss the tomatoes and lettuce with a splash of oil and seasonings.
  • Smear the mustard on one side of each slice of bread. Top with the salad, the sautéed onions, bacon, steak and eggs. Then sprinkle with BBQ sauce and serve.

  • olive oil
  • 1-2 red onions, sliced
  • 1 garlic clove, crushed
  • 2 x 150 gm steaks, trimmed of all fat & sinew and battened out
  • sea salt & freshly ground pepper
  • 2-4 rindless bacon rashers
  • 2-4 large eggs
  • 1 ripe red tomato, sliced & then quartered
  • 4 inner cos lettuce leaves, halved
  • 2 thick slices country-style bread
  • good quality grain mustard
  • good quality BBQ or tomato sauce
