Glamorgan cheese 'bangers'


  • Heat a little oil in a heavy-bottomed pan and gently sauté the onion and leeks until tender, stirring now and again.
  • Transfer the sautéed onions to a large bowl and add 150 gm Panko crumbs with 1 heaped tbsp chopped parsley, the tasty cheese, 2 eggs, a splash or two of Tabasco, the mustard and a little salt. Mix well using a wooden spoon, adding the remaining egg if too dry and a little more crumbs if too wet.
  • Form the mixture into sausage shapes and place on a workbench. Then carefully coat with more Panko crumbs mixed with a little grated parmesan.
  • Shallow fry the sausages until golden and brown. Then serve with a good dollop of tomato chutney on the side.
