Italian sausage lasagne

Method

  • Heat a little oil in a heavy-bottomed pot and gently sauté the onions, garlic, carrot and celery until tender, stirring now and again.
  • Add the mince and sausage meat. Mix well and cook until sealed, mashing as you do so.
  • Then turn the heat down and add the tomato pasta sauce, tomatoes, tomato paste, red wine, seasonings, dried oregano and thyme, and 1½ tbsp chopped parsley. Mix until well combined and gently cook for about 30-40 mins until thick and fragrant, adding a little stock if needed. Taste for seasoning.
  • To make the Mornay sauce, melt the butter in a small heavy-bottomed pot.
  • Add the flour and gently cook until well combined, continually stirring.
  • Then add the hot milk all at once with a decent amount of ground pepper. Whisk well.
  • Add 2 good handfuls of grated tasty cheese and whisk until melted and well combined. Taste for seasoning and set aside to cool a little.
  • When ready, preheat oven to 200°C fan forced (220°C normal).
  • Layer the meat sauce in a large lasagne tray (or large ovenproof dish) with the lasagne sheets and Mornay, finishing with the Mornay and a good sprinkling of grated tasty cheese and parmesan. Cook in the oven for about 15-20 mins until golden and bubbling.
  • Serve with a simple salad on the side.
  • nb.  If the lasagne has been pre-prepared and is cold, cook in an 180°C fan forced (200°C normal) oven for about 40 mins, covering with foil if browning too quickly.

  • 3 tbsp plain flour
  • 1 litre milk, hot
  • grated tasty cheese
  • instant lasagne sheets
  • freshly grated parmesan
