Jam tarts, 3 ways

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • To make Jammy Dodgers, cut rounds in the shortcrust pastry.
  • Smear jam on half of the pastry rounds and cut a smaller hole in the remaining rounds. Then place the smaller rounds on top of each jam-smeared base, brush with egg wash, crimp the edges and cook in the oven for about 6-8 mins until golden.
  • To make Jam Tarts, cut out rounds in 2 puff pastry sheets and press them into tart tins. Then place a spoon of jam in the centre and cook in the oven for about 5-6 mins.
  • When ready, pipe whipped cream on each one.
  • And, to make Jam Pastries, cut out rounds from the remaining puff pastry sheets. Brush the edges with egg wash, put a spoonful of jam in the centre of each round and fold in half.
  • Then brush all over with more egg wash, crimp the edges and cook in the oven for about 5-6 mins.

  • 2 eggs mixed with ½ cup milk
  • 4 puff pastry sheets
  • whipped cream
