Grilled mango cheeks with palm sugar caramel & a simple mango pudding


  • Cut two cheeks off each of 4 mangoes and dice the rest of the mango flesh along with the other mangoes. Set aside.
  • To make the sauce, boil the palm sugar with the orange juice until thick and golden.
  • Then spray the mango cheeks with oil and cook on a preheated ridged grill (or BBQ) until lightly marked.
  • To serve, sprinkle the mangoes with the caramel and a little cream and icing sugar.
  • To make the puddings, process the diced mango with the ice cream and 2 tbsp cream until just blended. (If a bit thin, briefly put in the freezer.)
  • To serve, spoon the mixture into 4 small bowls (or glasses) and top each one with the pulp of ½ passionfruit.
