Grilled pork skewers

Method

  • Combine the garlic, soy, fish sauce, vegie oil, ground pepper and sugar until dissolved in a large bowl. Then add the pork, toss to coat well and refrigerate for about 30 mins.
  • When ready, thread the pork onto skewers and cook on a preheated ridged grill (or BBQ), basting with the marinade for the first few minutes and brushing with coconut cream after that.
  • Serve the pork with lemon wedges and a simple salad on the side.
  • nb.  If using wooden skewers, soak them in cold water for about 1 hour before using.

Ingredients

  • 2 large garlic cloves, crushed
  • a good splash of soy sauce
  • 2 tbsp Asian fish sauce
  • 2 tbsp vegetable oil
  • freshly ground pepper
  • 2 tbsp shaved palm (or soft brown) sugar
  • 1 tspn chilli paste
  • 500 gm pork fillet, trimmed & evenly cubed
  • ½ cup coconut cream
  • 1-2 limes, cut into wedges
