Pickled herring salad


  • Toss the apple with the lemon juice and set aside.
  • Then cut the herrings into small pieces and toss with the rest of the ingredients.
  • Serve with good crusty bread on the side.
  • nb.  Whole canned beetroot could be used.


  • 1 large Granny Smith apple, peeled & cubed
  • juice of ½ lemon
  • 500-600 gm pickled herrings, drained
  • 2-3 cooked beetroot, peeled & neatly cubed
  • 1-2 gherkins, diced
  • sea salt & freshly ground pepper
  • 2-3 tbsp sour cream
  • 1 tbsp chopped fresh dill
