Prosciutto with a salad of fresh mango, watercress & goat's cheese

Method

  • Gently toss together the watercress, mango, goat’s cheese and prosciutto with oil and balsamic to taste.
  • Mound the salad on 1-2 plates and serve.

Ingredients

  • 2 good handfuls watercress sprigs
  • 1 large mango, sliced
  • a few knobs of soft goat’s cheese
  • 8 slices prosciutto, torn
  • extra virgin olive oil
  • balsamic vinegar
