A pesto, goat's cheese & tomato tart

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Cut the pastry sheet into 4 and place the squares on a lightly oiled baking tray.
  • Spread pesto over the top of each pastry square, leaving an edge. Then top with the cheese, a slice of tomato, a little pepper and an olive.
  • Beat the egg with the milk. Then brush the pastry edges with the egg wash and cook in the oven for about 10-12 mins until golden and risen.

  • pesto
  • soft goat’s cheese
  • 1 ripe tomato, sliced into 4
  • freshly ground pepper
  • 4 pitted black olives
  • 1 egg
  • ¼ cup milk
