A pesto, goat's cheese & tomato tart
Method
- Preheat oven to 180°C fan forced (200°C normal).
- Cut the pastry sheet into 4 and place the squares on a lightly oiled baking tray.
- Spread pesto over the top of each pastry square, leaving an edge. Then top with the cheese, a slice of tomato, a little pepper and an olive.
- Beat the egg with the milk. Then brush the pastry edges with the egg wash and cook in the oven for about 10-12 mins until golden and risen.

- 1 puff pastry sheet
- olive oil spray
- pesto
- soft goat’s cheese
- 1 ripe tomato, sliced into 4
- freshly ground pepper
- 4 pitted black olives
- 1 egg
- ¼ cup milk
