Brunch Burritos
Method
- Whisk the eggs with the cream, a little salt and a decent amount of ground pepper until well combined.
- Then heat a little oil in a large heavy-bottomed pan and briefly sauté the chorizo, regularly stirring.
- Add the egg mixture and scramble until almost set. Remove from the heat.
- Then add the feta, roasted capsicum and coriander to the egg mixture. Stir until the cheese melts a little.
- To serve, place a warm tortilla on each plate, mound the mixture in the middle and sprinkle a little tomato sauce over the top.
Ingredients
- 6 large eggs
- a good slurp of cream
- sea salt & freshly ground pepper
- vegetable or olive oil
- 1-2 chorizo sausages, diced (or bacon or salami)
- 75 gm feta cheese, crumbled
- 2 pieces fire roasted capsicum, diced
- 1 heaped tbsp roughly chopped fresh coriander
- 2 tortillas, heated
- good quality bought or homemade tomato sauce
