Brunch Burritos

Method

  • Whisk the eggs with the cream, a little salt and a decent amount of ground pepper until well combined.
  • Then heat a little oil in a large heavy-bottomed pan and briefly sauté the chorizo, regularly stirring.
  • Add the egg mixture and scramble until almost set. Remove from the heat.
  • Then add the feta, roasted capsicum and coriander to the egg mixture. Stir until the cheese melts a little.
  • To serve, place a warm tortilla on each plate, mound the mixture in the middle and sprinkle a little tomato sauce over the top.

Ingredients

  • 6 large eggs
  • a good slurp of cream
  • sea salt & freshly ground pepper
  • vegetable or olive oil
  • 1-2 chorizo sausages, diced (or bacon or salami)
  • 75 gm feta cheese, crumbled
  • 2 pieces fire roasted capsicum, diced
  • 1 heaped tbsp roughly chopped fresh coriander
  • 2 tortillas, heated
  • good quality bought or homemade tomato sauce
