Baked snapper with Spanish flavours
Method
- Preheat oven to 180°C fan forced (200°C normal).
- Place the fish in a gratin (or any ovenproof) dish and rub all over and inside with oil, the juice of 1 lemon and seasonings.
- Combine the paprika, garlic, crumbs and parsley with a little fresh oil and the juice of ½ lemon. Then scatter this mixture over the top of the fish. Press down, spray with oil and cook in the oven for about 10 mins until cooked. (Check if ready by making a small cut just under the head.)
- Serve with a lemon wedge and a simple salad on the side.

- 1 whole plate-sized snapper
- olive oil
- 2 lemons
- sea salt & freshly ground pepper
- 1 tbsp smoked (or plain) paprika
- 2 large garlic cloves, crushed
- ½ cup Panko crumbs (or fresh breadcrumbs)
- 2 tbsp chopped parsley
- olive oil spray
