Cooky's parmesan biscuits
Method
- Preheat oven to 180°C fan forced (200°C normal).
- Process the butter with 100 gm flour, the grated cheeses, cayenne, salt and mustard powder until it is ‘clumpy’. Then process in short bursts until it starts to come together.
- Knead the dough on a lightly floured workbench until well mixed and smooth. Then roll out to about 2 mm thickness and cut into rounds.
- Lightly oil a large oven tray and carefully place the pastry rounds on top, leaving space between each one. Brush the tops with the beaten egg and cook in the oven for about 8 mins until golden.

- 100 gm cold unsalted butter, cubed
- 100+ gm plain flour
- 50 gm grated tasty cheese
- 50 gm freshly grated parmesan
- a good pinch of cayenne
- a good pinch of salt
- ½ tspn mustard powder
- cooking oil spray
- 1 egg, beaten
