A delicious, simple rice pud
Method
- Put the milk, rice, vanilla bean, cinnamon stick and sugar in a heavy-bottomed pot. Bring to the simmer and gently cook for about 25 mins until tender, frequently stirring.
- Combine a good spoonful of the rice with the egg yolks. Then return to the pot and mix well.
- To serve, mound the rice onto individual plates and drizzle honey over the top.
- nb. This pudding can be served hot or cold.
Ingredients
- 1 litre full fat milk
- ¾ cup Jasmati (or any other long grain) rice
- 1 vanilla bean, cut in half lengthways
- 1 cinnamon stick
- 1/3 cup caster sugar
- 2 large egg yolks, beaten
- good quality flavoured honey
