A delicious, simple rice pud


  • Put the milk, rice, vanilla bean, cinnamon stick and sugar in a heavy-bottomed pot. Bring to the simmer and gently cook for about 25 mins until tender, frequently stirring.
  • Combine a good spoonful of the rice with the egg yolks. Then return to the pot and mix well.
  • To serve, mound the rice onto individual plates and drizzle honey over the top.
  • nb.  This pudding can be served hot or cold.


  • 1 litre full fat milk
  • ¾ cup Jasmati (or any other long grain) rice
  • 1 vanilla bean, cut in half lengthways
  • 1 cinnamon stick
  • 1/3 cup caster sugar
  • 2 large egg yolks, beaten
  • good quality flavoured honey
