Turkish cheese rolls

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Mash the feta in a bowl. Then add the egg and mint, and mix until well combined.
  • Cut the pastry sheet in half lengthways and lightly brush with melted butter.
  • Spoon the cheese mixture across the centre of one sheet and roll up, folding in the ends as you do so. Then place the roll on the other pastry sheet and roll up the same way.
  • Brush all over with more melted butter, place on a baking tray and cook in the oven for about 15 mins until golden and cooked through.
  • Cut into pieces and serve as a snack, or serve with a salad for a light lunch.

  • melted butter
