Greek cheese & spinach pie


  • Preheat oven to 180°C fan forced (200°C normal).
  • Combine the feta and haloumi cheeses in a bowl, and the cream with eggs in another.
  • Briefly blanch the spinach leaves in boiling water until just drained. Then drain very well and toss with the garlic.
  • Cut the pastry sheets in half, if large, brush with melted butter and layer 6-8 pieces in a greased springform cake tin, hanging over the sides.
  • Put the spinach in the base of the tin, gently push down and top with the cheese. Then sprinkle with ground pepper and carefully pour over the egg and cream mixture. Evenly spread out the top, fold the pastry edges over and brush with more melted butter. Top with 2 more pastry sheets, generously brush with butter and cook in the oven for about 15-20 mins until golden brown.
  • Serve with a simple salad on the side.
