Marcel's chicken stew with olives


  • Preheat oven to 170°C fan forced (190°C normal).
  • Put the oil and butter in a heavy-bottomed casserole (or pot that can go into the oven). Add the chicken in one layer, toss well and cook for about 5 mins over a medium heat.
  • Then turn over the chicken and cook for another 3 mins.
  • Add the tomatoes and brown sugar with 1 can water, the olives and seasonings. Cover and cook in the oven for 40 mins.
  • Serve the stew with steamed rice, your favourite potato dish or pasta, with a sprinkling of the parsley and basil.

  • 150 gm pitted black olives
  • sea salt & freshly ground pepper
  • 2 tbsp parsley leaves
  • 4 basil leaves, torn
