Cheese gratineed asparagus with a fried egg
Method
- Preheat overhead grill to highest degree.
- Carefully place the asparagus in a large pot of lightly salted, rapidly boiling water. Then bring back to the boil and instantly remove. Drain well.
- Brush a large gratin (or any ovenproof) dish with melted butter and neatly arrange the asparagus in one layer. Sprinkle with more melted butter, seasonings, breadcrumbs and quite a bit of parmesan. Drizzle a little more butter on top and cook under the grill for 5 or so mins until golden.
- When almost ready, fry one egg per person and place on top of each portion with a sprinkling of parsley.
- nb. Olive oil can be used instead of melted butter if you prefer.

- 24 large asparagus spears, peeled
- sea salt & freshly ground pepper
- melted butter
- fresh breadcrumbs (or Panko crumbs)
- freshly grated parmesan
- olive oil
- 4-6 large eggs
- 2 tbsp chopped fresh parsley
